Grilling Technique

YéYé's Special Sauce is a "finishing" sauce. General Information: You can cook any meat until almost done and then generously brush Yé's Special Sauce and turn over every few minutes to keep from burning until meat achieves required internal temperature.

Simple Instructions for Pork Baby Back Ribs:

Grilling Pork Baby Back Ribs:  Pre-heat grill, clean grates at medium heat. Remove membrane on ribs if you want for more tender ribs. Grill ribs bone-side down first for about 15-20 minutes. Flip and grill for another 15 minutes. Baste YeYe’s sauce on one side of ribs and cook for additional 5 minutes, then flip and repeat for the same time. Baby back ribs should have an internal temperature of 190F degrees.

Grilling Pork Baby Back Ribs:

  1. Preheat grill, clean grates at medium heat.

  2. Optionally remove the membrane for more tender ribs.

  3. Grill the ribs bone-side down for about 15-20 minutes.

  4. Flip and grill for another 15 minutes.

  5. Baste YéYé’s sauce on one side of the ribs and cook for 5 minutes.

  6. Flip and repeat the basting.

  7. Pull the ribs off the grill when the internal temperature reaches 190F degrees.

  8. Remove from the grill and let it rest for 5-10 minutes; the internal temperature will continue to rise to reach 190-200F degrees.

  9. Enjoy your delicious grilled baby back ribs!

 

Simple Instructions for Chicken:

Grilling Chicken:  Pre-heat grill, clean grates at medium/medium high heat. For chicken breasts or chicken skewers - dry the chicken and place on grill over direct heat for approximately 4-5 minutes per side. It may take longer to grill drumsticks and thighs. Generously brush YéYé’s sauce on one side of the chicken and move chicken to indirect heat for about 5 minutes. Flip and repeat on the other side for an additional 5-10 minutes until internal temperature reaches 160 degrees at the thickest point. Remove from the grill and rest for 5-10 minutes. The internal temperature will continue to rise about 5 degrees to reach 165F degrees. It’s always nice to have Yé’s sauce on the side for dipping!

  2. For chicken breasts or chicken skewers, pat the chicken dry and place it on the grill over direct heat for approximately 4-5 minutes per side. If you're grilling drumsticks and thighs, be prepared for a longer cooking time.

  3. Generously brush Yé’s sauce on one side of the chicken and transfer it to indirect heat for about 5 minutes.

  4. Flip the chicken and repeat the basting on the other side, cooking for an additional 5-10 minutes until the internal temperature reaches 160F degrees at the thickest point.

  5. Remove from the grill and let it rest for 5-10 minutes; the internal temperature will continue to rise to reach 165F degrees.

  6. Serve with Yé’s sauce on the side for dipping. Enjoy your grilled chicken!
